This agave spirit is not a tequila but a mezcal because it does not come from the blue weber agave variety but from an espadin agave. This mezcal comes from agaves grown and harvested 8,000 feet above sea level in the mountains near San Juan and San Luis del Rio near Oaxaca, Mexico. Colorado-born Master Sommelier, winemaker, and creator of Sombra Mezcal, Richard Betts, believes that the high elevation is the key to creating a more elegant resultant spirit.
