The welding shop was slowly replaced by new brick walls and copper pot stills in 2008, creating what is now the Balcones Distillery. By 2009, everything was ready for operation and they began distilling original and authentic expressions.

1. Rumble

The Balcones’ Rumble is fermented using Texas wildflower honey, turbinado sugar, and Mission figs. Its double distillation in traditional copper pots produces a distinct and elegant flavor for an easy-to-love expression unique to Texas
Expect aromas of honeysuckle, floral musk, fruity cocktail, jasmine, mint, and hints of vanilla. The palate begins with a light and fruity cocktail taste with bits of leather spice. It then gives you mild rosemary, oak, rye, kiwi, honey, mint, and sweet tea flavors with hints of grapefruit. It has a medium finish fading with a bit of spice and mint.

Balcones’ Baby Blue Blue Corn Whisky comes from roasted heirloom blue corn. An intentionally youthful expression, Baby Blue is a true Texas original. It successfully captures the essence of high-quality corn with refined complexity, roasted overtones, and round nuttiness.
It has a nose of toffee, kettle corn, melted butter, vanilla, fresh bread, and honey with nutmeg. There are also hints of baking chocolate in the aroma. The palate is an explosion of cotton candy, brown sugar, sweet tea with lemon, smoked chilis, and tropical fruit with apricot. It has a warm and medium-long finish.
3. True Blue 100

Balcones’ True Blue 100 has depth and complexity similar to that of overproof spirits, but with a more supple texture, softer edge, and fuller fruity flavor. It comes from select barrels of blue corn whisky brought to True Blue Cask Strength and diluted to 100 proof.
Ripe mango and apricots with cinnamon, dried chilies, and signed sugar atop cocoa comprise the nose. The flavor is of roasted corn, old leather, black tea, deep char, and oak, coffee, and salty baking chocolate. Expect a lingering finish with hints of blackberries and cherries.
4. Texas Rye

Balcones’ Texas Rye comes from a 100% rye mashbill from Northwest Texas’ Elbon Rye. This is blended with roasted, chocolate, and crystal rye before being distilled in copper pot stills. It’s an expression that prioritizes curiosity.
The nose starts off with cracked pepper black tea and soft charred oak aromas that transition to chocolate-covered cherries and fruits. Be ready for a palate of creamy buttery toffee that becomes peppery spice with hints of coffee and nuts. The finish is full of wonderful dark chocolate and peanut butter tastes.
5. Hechiceros – Single Malt

The Balcones Hechiceros Single Malt is a sweet single malt variety. It is finished using port casks and has wonderful notes of bread pudding and juicy fruit plus tres leches cake. The aroma greets you with a sour cream donut, honeysuckle, white grape juice, eucalyptus honey, dried apricots, and saltwater taffy nose.
It has a long and lingering finish with flavors of black tea, pop rocks, and grape skin. This is part of Balcones’ Distilling Special Releases lineup.
