Appetizer: Tequila Chicken Fajitas
We begin the meal with an appetizer recipe with hints of tequila. Fajitas have become part of every Latino’s lifestyle and this dish has also been loved by other cultures. With the blend of two of the favorite treats in the world, it will be a dinner like no other.
Ingredients:
- 2 tbsp. tequila
- 1 lb. chicken breasts sliced in strips – boneless, skinless
- Tortillas, flour or corn
- 2 tsp. fresh lime juice
- ¼ cup vegetable oil
- 3 pcs. medium cloves garlic, minced
- ¼ tsp. sea salt or kosher salt
- ½ tsp. chili powder
- ¼ tsp. cumin, ground
- ¼ tsp. paprika
- ¼ tsp. sugar
- 1 pc. Onion, medium-sized and sliced
- 1 pc. Bell pepper, large, seeded, sliced
- Fresh cracked black pepper
- Cheese and sour cream, shredded (optional)
- Chopped avocado, cilantro, tomatoes (optional)
Procedure:
1. Whisk three tablespoons of vegetable oil, garlic, salt, chili powder, paprika, ground cumin, fresh lime juice, and sugar within a small bowl. Include the tequila as you whisk these ingredients. Then, set aside.
2. Prepare to heat the skillet on medium-high then pour some oil. Add the chicken and cook for around two minutes until the color turns light brown. Then, you may now add the bell pepper and onion with the cooked chicken for another four minutes until the vegetables are made tender.
3. Add the mixture from the first step and cook for two minutes longer until it is mixed well with the chicken and cooked. Season with salt and pepper to taste. You may use the tortillas or serve with rice and mashed potatoes.

Main Dish: Tequila-Infused Shrimp Tostadas
Shrimp, as with other seafood varieties, provides the essential nutrients needed for heart health. This recipe by Food and Wine will break the ice of the usual meals you serve to your family or during parties.
Ingredients:
- 1 Hass avocado, to be mashed
- ¾ lb. shrimp, medium-sized, shelled and cut into ½-inch pcs.
- ½ canned chipotle in adobo sauce, minced and seeded
- 2 tbsp. silver tequila
- ¼ pineapple, diced
- ½ cup black beans, drained canned
- 2 scallions, chopped
- 3 tbsp. lime juice
- Salt
- Ground pepper
- 2 tbsp. vegetable oil
- 2 large garlic cloves, minced
- 1 tbsp. butter, unsalted and cubed
- Round tortilla chips, large
Procedure:
1. Begin by mashing the avocado with the beans, a tablespoon of fresh lime juice, pineapple and scallions in a bowl. Add salt and pepper for seasoning.
2. Prepare the skillet and heat. Once hot, add in the oil and wait until it shimmers. Season the shrimp with salt and pepper and add them to the skillet. Include the garlic and start cooking as you move the pan slightly during the process. This should be done in around two minutes.
3. Take the skillet out from the heat and begin pouring the tequila. You may tilt the skillet slightly away from the stove to ignite flames with the tequila. Then, add the butter, chipotle, and the rest of the lime juice. Wait until the butter is melted and this will take around two minutes. Once again, season with salt and pepper.
4. Turn toward the serving and scoop the cooked avocado mixture on top of the tortilla shrimp and add in the shrimp. You may drizzle the dish with more of the tequila. Serve fresh and hot.
Dessert: Smoked Chocolate And Tequila Ice Cream

Ingredients:
- 1 ½ cups whole milk
- 1 ½ cups heavy cream
- 6 tbsp. tequila
- 1 cinnamon stick
- 5 black cardamom pods, crushed
- 2 pieces of small-sized star anise
- 1 tbsp. whole coffee beans
- 1 cup turbinado sugar
- ¼ cup water
- ¼ cup raw honey
- 5 oz. chocolate chips, preferably with bittersweet flavor
- 6 pcs egg yolks
Procedure:
1. In a saucepan, mix the whole milk, cream, cinnamon, black cardamom, coffee beans, and star anise. Heat this mixture over medium heat just as it starts to show bubbles. Set aside without cover for a good 45 minutes.
2. Take this back to the heat and cook until below a simmer.
3. Use another saucepan to bring together 2 tbsp. of tequila with turbinado sugar and water before cooking this new mixture over medium heat. It will turn into a light caramel shade after about eight minutes. Afterwards, combine this caramelized mixture with the previous mixture prepared earlier.
4. Start cooking the raw honey in the saucepan used for the second mixture and use the same process for five minutes. Then, combine this with the current mix.
5. Use a large bowl to whisk the egg yolks while adding the current mix gradually.
6. Prepare the ice bath in a bowl and add in the chocolate chips in a medium bowl. You should also have a mesh basket strainer prepared.
7. Cook the mixture from Step 5 using medium heat with constant stirring. A rising steam will indicate that the custard mix is thick enough. Mix the custard mix into the bowl with choco chips using a strainer. Mix well.
8. Add this into the ice bath while stirring in the rest of the tequila. Now that your final mix is ready, you can move this over to the fridge overnight. It is also recommend to ask an expert ice cream maker to guide you through this process.
